If you love to go strawberry picking, you will fall in love with this mojito mocktail. Summer is almost here and strawberry farms are about to open. I am not sure about you, but I can always taste the difference between the fresh and store bought strawberries.

You take one juicy slurpy bite out of a fresh strawberry and you can feel the fresh strawberry melt in your mouth. Before you know it, you pick up the next one and the next one. Okay, that’s all me. Please don’t judge me, I just can’t resist a fresh strawberry! 🙂

I wish I could plant strawberries and other fruits in my garden. Hopefully next year. We have been planting veggies though. Mint came out great this year, just in time for my summer recipes. Looking at these fresh strawberries and the fresh mint, making this mojito was a no-brainer.

If you ever had traditional mojito, you know it has rum in it. Since I do not include alcohol in my recipes, I made this non alcoholic version. You can always add rum to make the taste to your liking. I also try to make healthier version, so instead of adding sugar, I added honey to get the touch of sweetness.

To make this strawberry mojito, you need to mash the strawberries and mint with a potato masher or a fork. You can also place these two ingredients in two glasses and muddle them until mashed.

Top up the glasses with soda water and add ice cubes. Garnish with strawberries and mint leaves.

If you are serving to the guests and want to make it more decorative, place some white granulated sugar in a plate.
